Patrick Joseph – Large Petty Knife (SKU: PJHMKK-098)
A Signature Large Petty Knife for Finesse, Reach, and Refined Daily Work
This Large Petty Knife by Patrick Joseph offers extended versatility for detailed slicing, trimming, and prep. With its slim profile and agile handling, it brings the finesse of a paring knife with the reach of a utility blade — making it essential for both professional kitchens and refined home cooking. Handmade in Ireland, this piece merges high-performance VG10 steel with the rich density of Granadillo hardwood, delivering clarity, strength, and artisan presence in every detail.
Material Excellence, Tailored by Hand
Granadillo Handle – Exotic Hardwood with Rich Tone and High Density
Granadillo is a Central American tropical hardwood admired for its weight, density, and deep reddish-brown hue. Naturally oily and resistant to wear, it offers both long-term durability and a refined, elegant surface. Each handle is shaped and polished by hand to highlight the rich tone and ensure an ergonomic, secure grip.
Black Liner – Reinforced Core with Elegant Contrast
A black liner between tang and timber enhances structural strength while providing subtle contrast beneath the warm grain of the Granadillo. It contributes to the knife’s integrity and visual refinement.
Suminagashi San Mai VG10 – Layered Steel, Unique to Each Blade
At the core of the blade lies VG10 stainless steel, selected for its hardness, cutting clarity, and edge retention. The core is protected through San Mai construction, with softer stainless steel layers laminated on either side for added toughness and corrosion resistance. The outer surfaces are etched and polished to reveal the blade’s Suminagashi pattern — flowing wave-like lines created by layering and folding steels of different carbon contents. Each blade is visually unique, with no two marbled patterns alike.
Key Attributes of Suminagashi San Mai VG10 Steel:
• Razor-sharp edge and long-lasting performance
• Triple-layer San Mai construction for strength and durability
• High corrosion resistance for professional kitchen use
• Signature Suminagashi wave pattern – forged into the blade, not printed
• VG10 kitchen knife – engineered for sharpness, longevity, and elegance
