Patrick Joseph – Santoku Knife (SKU: PJHMKK-113)
A Signature Santoku for Movement, Strength, and Refined Utility
This Santoku Knife by Patrick Joseph is created for those who seek precision and visual clarity in the kitchen. A master of vegetable slicing, meat prep, and fine dicing, the Santoku is celebrated for its compact efficiency and all-purpose power.
Handmade in Ireland, this knife combines the golden brilliance of Texas Osage with the wave-patterned edge of Suminagashi VG10 steel — bringing together North American timber and Japanese metallurgy in a tool made to move beautifully through work.
Material Excellence, Tailored by Hand
Texas Osage Handle – Dense Hardwood with Golden Hue and Natural Strength
Texas Osage is a highly durable, fine-grained hardwood known for its intense yellow-gold colour, stability, and density. With an oil-rich composition and resistance to wear, it delivers excellent hand-feel and confidence in long prep sessions.
Each piece is shaped and polished by hand, enhancing the natural glow of the wood and the strong lines of the Wa-style handle.
Red Liner – Reinforced Structure with Bold Visual Contrast
The red liner positioned between the tang and handle timber adds visual energy and internal strength. It punctuates the natural colour of the Osage while helping to stabilise and preserve the bond over time.
Suminagashi San Mai VG10 – Layered Steel with Cutting Elegance
The blade is constructed using the San Mai method, placing a core of high-performance VG10 stainless steel between two softer stainless layers. This configuration provides hardness, flexibility, and protection — while the blade’s etched surface reveals a flowing Suminagashi wave pattern, created through multiple layers of steel with varying carbon content.
These forged lines are as functional as they are beautiful — each one distinct, each one earned through the craft.
Key Attributes of Suminagashi San Mai VG10 Steel:
• Razor-sharp edge with refined control
• San Mai construction for structural integrity and flexibility
• VG10 core – favoured by chefs worldwide for precision
• High corrosion resistance – kitchen-ready every day
• Suminagashi wave pattern – layered, marbled, and unique to each blade
The Shamrock Pin – A Mark of Irish Craftsmanship
Set at the centre of the handle is the Shamrock Pin — a hallmark of the Patrick Joseph collection. It signifies authenticity, Irish making, and the deep pride embedded in each tool that leaves the studio.
