Patrick Joseph – Santoku Knife (SKU: PJHMKK-088)

A Signature Santoku for Precision, Comfort, and Exotic Luxury
This Santoku by Patrick Joseph is crafted for culinary professionals and collectors who seek timeless performance with rich material expression. With its short, nimble blade and robust spine, it’s the ideal companion for precise preparation, confident chopping, and daily cutting. Rooted in Japanese design and handmade in Ireland, this piece brings together rare Cocobolo hardwood and layered Japanese steel — a combination elevated further by the inlaid Shamrock Pin, marking each knife with Irish distinction.

Material Excellence, Tailored by Hand
Cocobolo Handle – Exotic Hardwood with Density, Colour, and Natural Oils
Cocobolo is a Central American hardwood celebrated for its vibrant tones, ranging from deep orange and red to rich brown, with intricate dark striping. High in natural oils, it offers excellent moisture resistance and a lustrous, enduring finish.
Each handle is selected, shaped, and polished by hand to highlight the complex grain and colour variation — making every piece a unique, luxurious statement of craftsmanship.

Black Liner – Reinforced Core with Elegant Contrast
A black liner lies between tang and handle, providing critical structural support and visual refinement. It enhances strength and adds a sharp contrast beneath the warm, expressive tones of Cocobolo.

Suminagashi San Mai VG10 – Layered Steel, Unique to Each Blade
At the core of the blade lies VG10 stainless steel, selected for its hardness, cutting clarity, and edge retention. The core is protected through San Mai construction, with softer stainless steel layers laminated on either side for added toughness and corrosion resistance. The outer surfaces are etched and polished to reveal the blade’s Suminagashi pattern — flowing wave-like lines created by layering and folding steels of different carbon contents. Each blade is visually unique, with no two marbled patterns alike.

Key Attributes of Suminagashi San Mai VG10 Steel:
• Razor-sharp edge and long-lasting performance
• Triple-layer San Mai construction for strength and durability
• High corrosion resistance for professional kitchen use
• Signature Suminagashi wave pattern – forged into the blade, not printed
• VG10 kitchen knife – precision-forged and made to endure

Built by Hand in Ireland
Every Patrick Joseph knife is built by hand in Ireland, guided by a commitment to precision, discipline, and detail. The process is deliberate, the standards exacting — resulting in a knife that performs flawlessly and endures through time.

The Shamrock Pin – A Mark of Irish Craftsmanship
Inlaid at the heart of the handle is the Shamrock Pin, a signature detail of the Patrick Joseph collection. Representing the values of Irish craftsmanship — tradition, authenticity, and pride — it distinguishes every knife as a genuine work of origin.
