Product Description

Patrick Joseph – Santoku Knife (SKU: PJHMKK-085)

A Signature Santoku for Precision, Comfort, and Wild Detail
This Santoku VG10 knife by Patrick Joseph is for chefs and collectors who value the interplay of raw natural texture and precise performance. With a versatile blade that delivers speed and control in every motion, it brings both power and elegance to the kitchen. Rooted in the Japanese Santoku tradition and handmade in Ireland, this knife features a striking brown pine cone resin handle with layered Japanese steel — and the Shamrock Pin to mark its place in Irish making.

Material Excellence, Tailored by Hand
Brown Pine Cone Resin Handle – Textural Wildness Encased in Warm Resin
Stabilised pine cone, suspended in amber-brown resin, creates a unique, organic texture preserved in a smooth, durable form. The structure of the cone is visible beneath the surface, offering a glimpse into nature’s geometry within a contemporary setting. Each handle is shaped and polished by hand, ensuring that no two pieces are alike — every one is a small artefact of craft and material.

Black Liner – Reinforced Core with Elegant Contrast
A black liner reinforces the structural bond between the tang and resin, while providing a clean visual break beneath the warm tones of the pine cone. Function and aesthetics meet with quiet precision.

Suminagashi San Mai VG10 – Layered Steel, Unique to Each Blade
At the core of the blade lies VG10 stainless steel, selected for its hardness, cutting clarity, and edge retention. The core is protected through San Mai construction, with softer stainless steel layers laminated on either side for added toughness and corrosion resistance. The outer surfaces are etched and polished to reveal the blade’s Suminagashi pattern — flowing wave-like lines created by layering and folding steels of different carbon contents. Each blade is visually unique, with no two marbled patterns alike.

Key Attributes of Suminagashi San Mai VG10 Steel:
• Razor-sharp edge and long-lasting performance
• Triple-layer San Mai construction for strength and durability
• High corrosion resistance for professional kitchen use
• Signature Suminagashi wave pattern – forged into the blade, not printed
• VG10 kitchen knife – created for excellence in form and function

Built by Hand in Ireland
Every Patrick Joseph knife is handmade in Ireland, guided by a commitment to precision, discipline, and detail. The process is deliberate, the standards exacting — resulting in a VG10 knife that performs flawlessly and endures through time.

The Shamrock Pin – A Mark of Irish Craftsmanship
Inlaid at the heart of the handle is the Shamrock Pin, a signature detail of the Patrick Joseph collection. Representing the values of Irish craftsmanship — tradition, authenticity, and pride — it distinguishes every knife as a genuine work of origin.
