Material Excellence, Tailored by Hand
Black Mesquite Handle – Rugged Strength, Natural Stability, and Unique Grain
Black Mesquite is a dense, desert-grown hardwood favoured for its natural toughness and irregular, expressive grain. Resistant to warping and cracking, it performs flawlessly under heavy use while showcasing deep brown tones and visual texture.
Each handle is shaped and finished by hand, capturing the unique grain movement and structural weight that define this striking wood.

Red Liner – Reinforced Core with Bold Contrast
A vivid red liner is fitted between tang and timber, reinforcing the structure while adding a sharp contrast that enhances the depth of the Mesquite handle. Functional, bold, and refined.

Suminagashi San Mai VG10 – Layered Steel, Unique to Each Blade
At the core of the blade lies VG10 stainless steel, selected for its hardness, cutting clarity, and edge retention. The core is protected through San Mai construction, with softer stainless steel layers laminated on either side for added toughness and corrosion resistance.
The outer surfaces are etched and polished to reveal the blade’s Suminagashi pattern — flowing wave-like lines created by layering and folding steels of different carbon contents. Each blade is visually unique, with no two marbled patterns alike.

Key Attributes of Suminagashi San Mai VG10 Steel:
• Razor-sharp edge and long-lasting performance
• Triple-layer San Mai construction for strength and durability
• High corrosion resistance for professional kitchen use
• Signature Suminagashi wave pattern – forged into the blade, not printed

Built by Hand in Ireland

The Shamrock Pin – A Mark of Irish Craftsmanship
Inlaid at the heart of the handle is the Shamrock Pin, a signature detail of the Patrick Joseph collection. Representing the values of Irish craftsmanship — tradition, authenticity, and pride — it distinguishes every knife as a genuine work of origin.
