Patrick Joseph – Santoku Knife (SKU: PJHMKK-074)

A Signature Santoku for Precision, Comfort, and Identity
This Santoku by Patrick Joseph is designed for chefs and cooks who value clarity in motion, control in preparation, and character in their tools. From fine slicing to confident chopping, it brings agility, balance, and visual expression to the everyday rhythm of the kitchen. Rooted in Japanese form and realised through Irish craftsmanship, this handmade kitchen knife blends natural artistry with precise function. At its centre lies the Shamrock Pin — a mark of origin and a tribute to Irish making.

Material Excellence, Tailored by Hand
Black Pine Cone Resin Handle – Wild Texture Suspended in Dark Resin
This handle features stabilised black pine cone suspended in a translucent, dark resin. Organic textures and growth patterns are preserved and framed in a clean, modern composition — offering a natural, unpredictable form beneath a glassy, durable surface. Each handle is shaped and polished by hand, revealing unique fragments and cellular details from the pine cone’s interior, transformed into a durable piece of functional sculpture.

Black Liner – Reinforced Core with Elegant Contrast
A black liner rests between tang and resin, creating a sharp visual separation while reinforcing internal structure. This subtle transition adds strength, form, and cohesion to the overall design.

Suminagashi San Mai VG10 – Layered Steel, Unique to Each Blade
At the core of the blade lies VG10 stainless steel, selected for its hardness, cutting clarity, and edge retention. The core is protected through San Mai construction, with softer stainless steel layers laminated on either side for added toughness and corrosion resistance. The outer surfaces are etched and polished to reveal the blade’s Suminagashi pattern — flowing wave-like lines created by layering and folding steels of different carbon contents. Each blade is visually unique, with no two marbled patterns alike.

Key Attributes of Suminagashi San Mai VG10 Steel:
• Razor-sharp edge and long-lasting performance
• Triple-layer San Mai construction for strength and durability
• High corrosion resistance for professional kitchen use
• Signature Suminagashi wave pattern – forged into the blade, not printed
• Premium VG10 kitchen knife – made to endure and perform

Built by Hand in Ireland

The Shamrock Pin – A Mark of Irish Craftsmanship
Inlaid at the heart of the handle is the Shamrock Pin, a signature detail of the Patrick Joseph collection. Representing the values of Irish craftsmanship — tradition, authenticity, and pride — it distinguishes every knife as a genuine work of origin.
