Product Description

A Signature Gyuto for Precision, Balance, and Identity
This handmade Gyuto by Patrick Joseph is crafted for chefs and collectors who value refined performance with a sense of origin. From meticulous slicing to robust preparation, it offers sharpness, balance, and flow in every movement — bringing intention and beauty to daily work. Inspired by the classic gyuto profile and realised through Irish craftsmanship, this handmade kitchen knife blends heritage materials with modern execution. At its centre is a Commemorative Japanese Pin — a mark of honour and a moment of shared cultural recognition.

Material Excellence, Tailored by Hand
Black Mesquite Handle – Rugged Strength, Natural Stability, and Unique Grain
Black Mesquite is a dense, desert-grown hardwood prized for its dramatic grain, durability, and deep tone. Naturally stable and moisture-resistant, it offers outstanding strength with a warm, tactile finish. Each handle is hand-shaped and polished to accentuate the bold flow of the wood’s natural pattern — no two pieces are ever alike.

Black Liner – Reinforced Core with Elegant Contrast
A black liner is positioned between tang and timber to reinforce structure while adding an understated contrast beneath the richly toned Mesquite. It balances the material visually and supports its longevity.

Suminagashi San Mai VG10 – Layered Steel, Unique to Each Blade
At the core of the blade lies VG10 stainless steel, selected for its hardness, cutting clarity, and edge retention. The core is protected through San Mai construction, with softer stainless steel layers laminated on either side for added toughness and corrosion resistance. The outer surfaces are etched and polished to reveal the blade’s Suminagashi pattern — flowing wave-like lines created by layering and folding steels of different carbon contents. Each blade is visually unique, with no two marbled patterns alike.

Key Attributes of Suminagashi San Mai VG10 Steel:
• Razor-sharp edge and long-lasting performance
• Triple-layer San Mai construction for strength and durability
• High corrosion resistance for professional kitchen use
• Signature Suminagashi wave pattern – forged into the blade, not printed
• A top-tier VG10 kitchen knife, built to endure

Built by Hand in Ireland
Every Patrick Joseph knife is handmade in Ireland, guided by a commitment to precision, discipline, and detail. The process is deliberate, the standards exacting — resulting in a knife that performs flawlessly and endures through time.

The Commemorative Japanese Pin – A Mark of International Distinction
Each knife in this edition features a Commemorative Japanese Pin, created to honour Patrick Joseph’s invitation to the prestigious Seki Invitational Knife Show in Japan. Held in the historic city of Seki — the heart of Japanese blade-making — the show recognises the finest artisan kitchen knives in the world. The pin symbolises shared values of excellence, tradition, and respect between cultures.
